Vegetarian/Vegan Eating at Exeter
Here at Exeter we are pleased to provide a variety of options for vegetarian and vegan eating. While we know there are several different subsets of vegetarian and vegan philosophies, we provide choices which will appeal to the widest variety of students and so include dairy products and eggs (lacto-ovo-vegetarian) in listings.
Pam Stuppy, MS, RD, LD nutritionist for the Academy, is available for consultations and to help students understand the specific nutritional requirements for all types of vegetarian eating.
Vegetarian and vegan students can find entrees on the hot line or can combine a number of foods found in the dining hall to create hot or cold meals. Meals should contain a good source of protein such as beans, tofu, nuts, seeds, tempeh, peanut butter, soy nut butter, soy milk and hummus. Lacto-ovo-vegetarians can also include eggs, cheese, milk and yogurt. Sample vegetarian/vegan entrees include beans and rice; stir fry with beans, tofu, nuts, tempeh and/or seeds; bean soup; bean burritos or tacos without cheese; baked beans; bean, tofu or tempeh casserole; or grilled tempeh with vegetables.
